I've decided to do "Five Things" every wednesday and feature five things that fascinates me!
I guess this is a way for me to blog more regularly.:D

ITS INSANE I TELL YOU!
Watch to fnd out out. I want to learn how to do this!

2. These are the cutest kids invitation card ever! The halloween cards are awesome too! I feel like having a children's birthday theme party for my 21st.

3.Gala Darling has some really useful advice about naming your blog. I love my blog name but if you're always constantly changing your blog name this might help!

4. Check out this DIY tutorial on making a leather strand necklace at love Maegan. I'm going to making this!

5. I'm worshiping this drool worthy pair of shoes at Sea of Shoes. The craftmanship is amazing, not to mentio pricey.

Macaroons. In Conclusion

Remember, my first post about macaroons here and how horribly disappointed I was that they turned out horrible?

Well, here the photos of my 4th attempt at making it.

Not bad eh? Its still a work in progress but I'm getting closer to achieving

How does it taste?? Well you've got to ask Mr. Wonderful, ny friend Ming and bloggers, HP, Henry, Ying Zi and Josh, cos they got to taste it. :D

Well, I told Ying Zi, I'd blog about the recipe.

So what is a macaroon or in french, la macaron?

Well, in short, its a sweet confectionery that originated from Italy, and made popular by the French.

What's so special about it?

Its pretty and its delectable and making it, is a complete nightmare to make because you can get different results from such a simple recipe. Ask around and you'll find lots of people who attempted making it curse and swear.

So here's two disclaimer from someone who has (really) cried over the failures.

1. Be prepared to be disappointed if its your first try.
2. FOLLOW THE EXACT RECIPE, including the measurements and all.

So with that, if you still insist on giving it a try, here goes.

For the recipe, I actually followed the recipe from Not So Humble Pie. She goes really in depth into the science of making macaroons in pursuit of making the perfect macaroon including trouble shooting the process. She adjusted the recipe here, but I've not tried it yet since my 4th attempt so for now, I'll share her previous recipe :D.

Ingredients:

120g Ground almonds
200g confectioner's sugar
100g egg white
30-35g caster sugar
pinch of salt
food colouring

Utensils:

Round-bottom metal mixing bowl
Electric Mixer
Baking tray
waxed baking paper or silicone baking mat
spatula
piping bag

So for the recipe itself, (I'll be giving some tips along the way and the reason why I insist you need to do some things and etc.

1. Measure the ingredients to the EXACT measurement.

Any less,or any more will ruin it. Trust me.

2. SHIFT, the confectioner's sugar and ground almonds together and mix well.

I'll explain later why.

3. Line the baking trays with waxed baking paper.

2. Put the egg white into the mixing bowl with a pinch of salt and beat it with a mixer till its glossy and stiff.

Why I say a round bottom METAL mixing bowl, is because a flat bottom means the whisk on the mixer wont be able to get the egg white on the bottom and you won't be able to get that stiffness you need. (If you turn it upside down and it doesn't drop, its perfect.
Why metal? Something about acidic reaction and blah blah blah. All I know is that metal bowls, makes better meringue.
You can also age the egg white for 24 hours but I don't cos I'm lazy. :P

3. As you beat the egg white, slowly add in the colouring and the caster sugar. Personal preference on how deep the colour you want to be.

4. Slowly, add a quarter of the sugar/almond mix into the egg whites and FOLD with a spatula until it mixes with the foam. Repeat till you've added all the mix in. Don't break the foam!

To do this, mix it in a circular motion on the edge of the bowl.

(these are pictures from my third attempt. Obviously, I didn't do it right cos its grainy and this is the reason why you should shift the sugar/almond)

5. Mix till the batter is thick but only slightly runny.

To know you've reached this point, do a test on a plate. drop some batter and the top should flatten after awhile without lossing its shape. If you over mix it, I'm sorry, I can't help you.

6. Spoon the batter into the piping bag.

You can make do with a plastic bag if you don't have one. It helps if you fold over the bag in a tall glass so it makes it easier to fill it up.

7. Pipe it into round even circles.

Make sure its evenly spaced out cos it'll spread. My piping needs work.

8. Tap the tray on the counter to bring up air bubbles and pop it with a toothpick!

9. Leave it to set for an hour to create the shell. (The bottom fluffy part is called the feet by the way)

Why an hour, cos in Singapore, the humidity is so high! Actually, even an hour is not enough, to create a proper shell. If you live an a low humidity area or have a humidity control thingy in your kitchen, half an hour is enough, sometimes even 10 minutes.

I left this out for 10 minutes, and the shells were too thin.

10. Preheat your oven to 150 degrees Celsius. I use a microwave/convention oven, so I don't need to do any pre-heating. The temperature range varies depending on your oven, if you know every quirks and idiosyncrasies of it, you can probably adjust accordingly. Usually the range is from 150 to 200 degree Celsius.

11. Bake for 15-20 minutes. Once again, depending on your oven. Let it cool.

As you can see, its important to use WAXED baking paper

Pretty horrible for my third attempt. But at least these went into the oven. My second attempt was thrown out cos I over mixed the batter.

Trying to pick it off the baking paper. Lol. The shells were so thin, they cracked that no feet formed. D:

So umm that's pretty much it. If you want to put some sort of filling, you can try jam which I used, or search for recipes for ganache online.

The filling I used for my fourth attempt.

I made it using 1/3 cheese cream, 1/3 icing sugar and 1/3 butter. This one, you can experiment on the ratio. :D

On a final note, here are a few things.

If you're confused over my instructions, here's a video I recommend watching to get a "visual" of how things are done and how things should look.

And I recommend really highly that you Not So Humble Pie before making any attempt whatsoever, and when you if you have any problem, just leave a comment and I'll see what I can help with? Lol.
Oh and thanks to HP and Ying Zi! I took your photos of my 4th attempt macaroon!

A Quickie

Okay here's a quick update!

1. I met up with a some bloggers, HP, Ying Zi, Henry of Clever Munkey and Josh on Saturday and I finally met the (in)famous Henry for real! HAHA! I also brought along Mr. Wonderful and Ming (not the Boss).
I'm a lousy blogger, I didn't take any pictures. I was too busy having fun Lol!
But do check out HP's post here if you want to know what we did.

2. My last paper is on the 17 September! Wish me luck!

3. And OH MY GOODNESS, I've been blogging for 6 years now and I didn't realise it! I wrote my first blog post on my first blog on September 4, 2004 and its waay past September 4. Quick celebrate with me! Maybe I should do a small give away? Lemme know what you think?

4. Remember my post about my first attempt at making Macaroons? (PS: I just wiki-ed this. Macaron is the French spelling while Macaroons is the English spelling)
Well I've had made a few attempts and I shall do an update of it cos partially I told Ying Zi I'll blog about the recipe and the trouble shooting etc.
I actually made a few for Henry. Lol and he thinks it alright but I've got more fine tuning it and the ingredients aren't exactly pocket friendly. (Ouch)

That's all for now! This is the longest quick update ever. Lol. :D

Overwhelming Nostalgia

Okay, taking a short break from immersing myself in my notes.

On Thursday my one of my Godmother (apparently I have a few godparents) and a few of her colleagues from the Department of Education in the Philippines came to visit! They're leaving tonight tho. D:

My Godma is actually my aunt on my Dad's side.
Well, they decided to go to Malaysia and Batam since they've been to Singapore a few times.
(If not for my exams, I'd go along with them to Malaysia D:)

And I decided to share with you what my Aunt bought for us! Well the things that interests me anyway. Hehe.

Snacks!
Snacks from back home!
Oh how I miss the high-cholesterol, high-sugar, high-calorie, high-fat content snacks of Philippines.
Hehe.

Coco Jam and Peanut Butter!
Among that are my two favourite bread spread! Coco Jam and Peanut Butter. Homemade. :D
Coco Jam is like Kaya but so much more smoother and sweeter and sticky-er. XD

Smooth

Creamy

Peanut Butter

You can probably tell I'm obsessed with the Peanut Butter. You would too if I tell you that its, creamy smooth, and sweet. I can't stand dry peanut butter, Its yucky and it always somehow gets stuck on the back of my teeth.

Peanut Butter Love

Oh and here's another thing my Godma gave me.

Esmeralda

She's an Acoustic from Cebu, the province that's best known for its historical sights, scuba diving and hand-crafted guitars.

You probably met Charlie from my now defunct Project 52.
2/52 - Me and My Guitar
Charlie is Mr. Wonderful's guitar.

Now Charlie the classical guitar has a girlfriend. XD

Singapore City Pass Launch

So on Tuesday, a few Glitterati Plus members and I were invited to the launch of Singapore City Pass by City Tours and were told to dress in our most comfy sightseeing outfits!

Sounds exciting!

I woke up bright and early and headed to the Singapore Flyer for registration and met up with the rest of the G+ members.

Each of us were given this stamp-size Singapore City Pass which makes use of RFID.

Its pretty unique cos City Tours created the first RFID tag that can be loaded with admissions to different attactions, retail, F&B & events, all in one pass.

What does all that mean?

No more queuing and having to handle different tickets of various attractions!

Meet the G+ members! All posing with our Singapore City Pass!
(From left: Mabel, Taqinah, Me, Tracy, Joanne, Joyce, HP, Jian Hao, StellaShu Fen

So why did we each get a pass?

Cos we're going on a tour!

On the

 FUNVEE!

And to ride the Funvee all we had to do was tap our Singapore City Pass! Pretty much like an EZ-link card but more awesome cos its actually a sticker which you can stick onto the back of your phone.

Ooh! Look at the people who looks like toys from the view of the Funvee!
(Hehe, that's just me making use of my Photoshop skill to create a Tilt-Shift effect)

It was so hot! But nevertheless we were the only group who braved sitting on top to roast.

2nd group shot!

This is actually my first time riding on an open top bus and I was like Damn the sun, I'm sitting on top!

While waiting for the other guests to board, I started taking photos.

Giddy with excitement!

The Singapore Flyer!

(I got to admit my composition's improving)

And we're off!

Actually once the bus got moving, it really wasn't that hot anymore.

and the view, unobstructed with windows and a roof, was pretty amazing.

Guess what building?

Its MBS! We took a scenic route of Singapore's skyline :D

I was squinting from the harsh sun.

Look at the reflection!

That morning the skies were really clear and cloudy.
And is that a ghost cloud about to eat Singapore's future CBD??

There it is again!

The future Marina Bay Financial Centre

Oh and ladies, if you want to take the Funvee, It gets really windy!

Tie you hair securely like Taqinah!

And not into a loose braid like mine. Wind blown hair not so great if its not done with a brush and a blow dryer.

Haha using my scarf to shield my head from the awful sun and at the same time channelling the Grace Kelly look. Needless to say I failed. I looked more Middle Eastern than European Royalty.

Tracy and I. <3

If you were wondering where we were heading, here's a clue.

Resort World? Nope.
But its on one of Sentosa's best attraction.

Here are some photos along the way. :D

We drove under a cable car and I took this quick shot of a cable car passing by!

The other guests getting off. Wave to the cameraman!

And here we are! Underwater World Singapore!

They were hosting the launch of Singapore City Pass and its one of the many attractions which you can you use Singapore City Pass to gain admission to!

We were super excited!

I felt like exploring immediately! But I was ushered away. D:

To be greeted by a Ukulele performance!

Its such a unique performance.

We were herded to the Dolphin Suite. Which is the Dolphin Lagoon's VIP Lounge.

Classy.

We were treated a Dolphin show from the VIP lounge and there was this banner welcoming us!

PS: This the new dolphin lagoon! And its beautiful!

 The dolphins are so cute!

And on the official launch where we learnt more about Singapore City Pass!

Okay quick question,
If you were a tourist, what would you want to join a structured tour package with a fixed itinerary or would you prefer a more flexible and independent way of enjoying your holiday??

Well on one had, tour packages are value for money but flexibility and independence in choosing what you want to do and when is also attractive.

With Singapore City Pass you can!

You can pick and choose what attractions you want to see and when!

I was pretty amazed because you can save up to 20% if you choose to see Singapore sights and attractions through the use of Singapore City Pass.

You can check the website to find out more about their packages. :D

What I'm looking forward to is the themed packages like a food tour! Where I can hop on and off hopper buses to F&B outlets to makan at my own leisure. I can't wait for that!

For now Singapore City Pass can be used at attractions like Underwater World Singapore, The Singapore Flyer, The Singapore Zoo and Night Safari to name a few.

Then it was time for refreshment.

Taqinah mesperized by the pink dolphins swimming in their new home.

Photos!

We were entertained by the girls with the Ukuleles! I wish I got their names, they're pretty awesome.

Then we decided to explore Underwater World Singapore!

The last time I came here was years ago! They have so many new things like this tank where you can put your hands in. (That's Shu Fen's hands all waiting to be nibbled)

Huge FISH!

Paul! (Lol not really but it could be a relative)

Did you know Underwater World lets you swim with the shark! So cool!

Had trouble taking a photo cos we were on the travellator. D: I think Joyce had more luck.

Wish I could swim inside too!

The Dugong.
So cute! I want one! Its chomping the seaweeds!

Jelly Fishes!

It was fun exploring Underwater World Singapore after a long long time and using Singapore City Pass allows you to See More! Do More! Get More!

(Psst the G+ members who attended are planning on an outing using our Singapore City Pass, we plan on going on the Captain Explorer DUKw Tour soon!)
